It's delicata squash season! Every fall, I anxiously await one of my favorite vegetables to be available -- delicata squash. Known as the "lazy man's squash" because the skin is edible, it's got a delicious, slightly sweet yellow flesh and is very versatile.

Baked, steamed, oven-roasted, microwaved or sauteed -- the possibilities are endless. Ripe delicata squash is yellow with green stripes along the ribs, and it should be firm and heavier than you expect it to be. Avoid delicata squash that is light green (unripe) or ones with lots of off-color spots.

I have three very different recipes to share with you today. One is a pork-ragu-stuffed delicata squash, the second is delicata squash muffins and lastly, delicata squash brownies. I promise in the second two recipes, no one will know there is delicata squash in there, so it's a great way to sneak some extra veggies into your diet.

While the delicata squash season is short, typically from the end of August to about Thanksgiving, they keep in a dry, cool place for several months. My suggestion for you is to stock up in November so you can enjoy this squash well into 2022. You can thank me later!
