Greek Lamb Beef Lettuce Wraps with Mediterranean Pico de Gallo and Green Bean Salad

3 Lamb Beef Patties from BurgerIM.

 

2 Cloves Minced Garlic

1 cup Grape tomatoes chopped.

½ White Onion Chopped.

1 Serrano Pepper seeded and chopped

½ Lime Juiced

¼ Cup Cucumber seeded and chopped

1 tbsp Mint Chopped

1 tbsp Cilantro Chopped

½ tsp Liquid Monk Fruit from Now Foods

2 tbsp Feta Cheese crumbles

1 tbsp Pumpkin Seeds toasted and crushed

1 cup Green Beans raw and julienned from AMITA Health

1 cup Green Beans raw and chopped from AMITA Health

1 tbsp Balsamic Vinegar

1 tbsp Olive Oil

1 Head Red leaf Lettuce

Salt and Pepper to Taste

For the wraps. In an 8" pan cook the Lamb Beef patties with olive oil, garlic and salt and pepper to taste. Break patties down like ground meat cook thoroughly. Drain excess fat. Reserve.

For the Pico de Gallo. Mix in a bowl tomatoes, onions, serrano pepper, cucumber, mint, cilantro, half the portion of Feta Cheese, lime and half the portion of Liquid Monk Fruit. Salt and Pepper to taste.

For the Green Bean Salad. Mix in a bowl the chopped green beans, balsamic vinegar, olive oil, pumpkin seeds, half the portion of Feta Cheese and half the portion of Liquid Monk Fruit.

Pull 2 leaves from the lettuce head, rinse in cold water. Remove excess water

To plate. Serve ground Lamb beef on a lettuce leaf add Pico de Gallo and julienne green beans. Serve with a side of chopped Green Beans Salad.
