1 cup stale French bread cubes

2 pounds ground pork

2 cloves garlic, crushed

2 eggs

½ teaspoon salt

½ teaspoon pepper

½ cup oil

Put bread cubes in a small bowl; add enough water to thoroughly soak bread.

Combine pork and garlic in medium bowl. Squeeze water out of bread (discard water) and add to bowl along with eggs, salt and pepper. With your hands, mix well and shape into 6 patties.

Heat oil in skillet over medium high heat. Cook patties on one side for 5 minutes or until golden brown; flip and cook 6 to 7 minutes more or until cooked through. Remove to paper towels. Serve over mashed potatoes and with a vegetable.

Serves six.
