Three new restaurants and Nothing Bundt Cakes are under construction in Kildeer and scheduled to open in early November.
Café Zupas, Roti Modern Mediterranean and Anthony's Coal Fired Pizza will join the bakery in an outlot near Uncle Julio's in the 200,000-square-foot Kildeer Village Square mall on Rand Road across from Deer Park Town Center.
"The new restaurants were supposed to open in September, but there have been some delays," said Michael Talbett, chief village officer in Kildeer. Nordstrom Rack, DSW, Forever 21 and Nike Outlet are highlights at the mall, developed by Chicago-based Bond Companies.
The new eateries are a welcome addition, Talbett said.
The three establishments are all growing in the suburbs.
Joining locations in Wheeling and Schaumburg, Café Zupas serves soups, salads and sandwiches that are made in-house. The chain, founded in Utah, opened its first restaurant in 2004, and has locations in Arizona, Idaho, Minnesota, Nevada, Ohio, Wisconsin and Utah, according to the company website.
Nothing Bundt Cakes is another concept growing across the suburbs. New stores are expected to open in Algonquin, Gurnee and Vernon Hills in the coming months.
The national chain based out of Las Vegas sells 8-inch, 10-inch and tiered cakes, as well as bundtlets and bundtinis -- bite-sized cakes sold by the dozen. Flavors include red velvet, chocolate chocolate chip, lemon, marble, pecan praline, carrot, vanilla, cinnamon swirl and white chocolate raspberry. Additional specialty flavors also rotate through the selection.
Roti Modern Mediterranean, based in Chicago, features a fast-casual, Mediterranean diet-based menu with whole grains, a wide variety of vegetables, and antibiotic- and hormone-free lean proteins including chicken, steak, salmon and falafel. The Mediterranean diet has sustained people for centuries, according to the company website.
Anthony's Coal Fired Pizza is also spreading through the suburbs. The casual restaurant concept based in Florida offers coal fired pizza, oven roasted chicken wings, homemade meatballs, Eggplant Marino (named after partner and NFL hall of famer Dan Marino) and Anthony's classic Italian salad. With more than 60 locations across the country, the pizza chain started out as a single-restaurant concept back in 2002. Founder Anthony Bruno, who grew up on Long Island in a traditional Italian family, could not find a good, authentic pizza when he moved to Florida, so he made his own and started the business.
